Oreo Cookie Chocolate Cake

JJ put this cake together from three recipes.  You need to make the cake portion of Mammaw's One Layer Chocolate Cake, only bake it in two greased 9" round cake pans for 15- 20 minutes. JJ lined the bottom of each pan with parchment paper. Be sure you don't over bake.  When done right the cake will easily come out of the cake pans, but will be nice and moist when eating.  JJ starts checking the cake for doneness at 15 minutes.  When done, cool shortly in the opans then turn the cakes out on cooling racks and cool thoroughly.

Filling:
The oreo cookie filling is made by crushing 24 regular stuffed Oreo cookies into one 8oz package of cream cheese which has been combined with 1/2 cup of sugar and 3 cups of cool whip.  You may need to vary the cool whip slightly to get a firm enough filling.  Use the filling between the two cakes and then cover the top and sides with the remaining.

Chocolate Gan-ache
Make the gan-ache by heating 1/2 cup of whipping cream almost to a simmer and pouring it over 4 1/2 sqares of chopped bittersweet chocolate.  Stir until the cream and chocolate are thoroughly combined and smooth.  Pour slowly over the top of the cake letting a little drizzle down the sides.
